Just “maybe” our weather is changing for the better and we can begin to think about spring and the joys of outdoor cooking.  We love this recipe because it is so good and so easy.

4 pork loin chops (1 ¼ inches thick)
1 medium onion, chopped
¼ cup soy sauce
2 TBSPs olive oil
2 TBSPs ketchup
1 clove garlic, chopped
Ground pepper to taste

Place pork chops in a plastic bag or deep bowl. Combine all ingredients and pour over pork chops. Marinate in the refrigerator for 4 – 6 hours, turning the bag or chops occasionally. Remove chops from the marinade. Grill uncovered over hot coals for 2-4 minutes per side.

Stand the pork chops on end, bone side down. Lower grill hood and cook for 25 – 30 minutes or until juices run clear. I cook the reserved marinade in a small saucepan, boiling for several minutes to serve over the pork chops at the end of the grilling process.
