The strawberries have been so good this spring. Here is a delicious way to enjoy them!
STRAWBERRY, GOAT CHEESE, AND SPRING GREENS WITH
Divide springs greens and place on salad plates
Sprinkle with halved or quartered fresh strawberries to taste
Scatter crumbled goat cheese to taste over berries and greens
Scatter Honey Roasted Pecan Pieces sparingly over the above ingredients (available at Hy-vee – the brand is Fresh Gourmet)
Drizzle with Balsamic Vinaigrette to taste
1 Tablespoon white sugar
¼ teaspoon kosher salt
1/8 to 1/4 teaspoon freshly ground pepper (to taste)
3 Tablespoons good balsamic vinegar
Shake until well combined and sugar is dissolved
Add scant ½ cup Olive Oil
Shake until well combined. May refrigerate and store for up to one week.
This amount of dressing will be enough for 4 – 6 regular size salads.
